⚙️ White tea processing technology is based on minimal intervention and includes only two main stages: withering and drying. Rolling is not used, preserving the natural structure of the leaf and reducing intensive tannin extraction. Oxidation remains low—around 5–10%, and the full processing cycle lasts 24–72 hours depending on environmental conditions.
🌬️ During withering, leaves are spread in a thin layer on bamboo or ventilated surfaces and undergo a 12–36 hour process (sometimes up to 48 hours) at 20–30°C and 60–75% humidity.
