🍃 Black tea "Mamatea" is produced in the high-mountain village of Mamati in Guria, from tea leaves grown under local conditions. 🌱 The leaves are picked by hand, which ensures quality control of the raw materials and the selection of only suitable leaves.
🛠️ Processing Method: For production process we use traditional orthodox technology. The harvested leaves undergo natural wilting, after which they are twisted. 🔄 As a result of twisting, the fermentation process begins, the course of which is controlled by temperature 🌡️ and humidity 💧. After fermentation is complete, the leaves are dried at a certain temperature, which ensures the stability of the product and the formation of aroma.
📦 At the final stage of production, the tea is sorted and packaged. All stages of production are carried out in compliance with cleanliness 🧼 and technological regimes ⚙️, which ensures uniform quality and product safety. ❌ Our black tea does not contain artificial additives, dyes or flavorings.
🍵 Flavor Profile: Georgian black tea is known for its mild, smooth character with low astringency and medium body. Flavor notes may include malt, dried fruit, honey 🍯, roasted nuts 🌰, or hints of muscatel, depending on the terroir and processing.
🌿 Raw Material: 📍 Origin: Mamati village, Guria, Georgia✋ Harvesting: Hand-picked🍃 Leaf standard: Selected mature leaves suitable for black tea production❌ Additives: None (100% pure tea leaves).
🛠️ Processing Method – Mamatea is produced using traditional orthodox technology, ensuring preservation of the leaf structure and natural aromatic compounds.
🌱 Withering (Wilting): Freshly harvested leaves are naturally withered to reduce moisture content while maintaining cellular integrity.
🔄 Twisting (Rolling): Leaves are twisted to initiate enzymatic oxidation. This step shapes the leaf and releases essential oils, contributing to aroma and flavor development.
⚡ Fermentation (Oxidation): Controlled fermentation takes place under regulated temperature 🌡️ and humidity 💧, allowing full oxidation and the formation of characteristic black tea flavor compounds.
🔥 Drying (Firing): The leaves are dried at a precisely controlled temperature to halt oxidation, stabilize the product and lock in aroma.
📦 Sorting and Packaging: Final sorting removes non-standard particles, after which the tea is packaged under hygienic conditions in accordance with technological and safety standards.
